Celiac Disease Explained.....
This disease, also known as celiac sprue is influenced by genes and results from eating gluten. The disease causes chronic damage to the small intestine when gluten is involved (consumed). The interaction gluten causes with someone who has this disease affects the entire immune system.
This often undiagnosed disease used to be rare but has become quite common. Actually, it has become better diagnosed. Even in apparently healthy, symptom-free American adults, this disease is found in 1 in every 111 people. It's twice as common as cystic fibrosis, Crohn's disease, and ulcerative colitis combined.
The disease cannot arise in a person who does not consume gluten grains. Although there's a widespread belief that these grains, especially whole grains- have been noted as being a healthy food, it wasn't until it was shown that gluten injures intestinal tissues and that becoming gluten-free consistently reverses the damage, that people really saw a true problem with gluten. Unfortunately there are many ailments that result from the disease going untreated.
